CHICKEN + HALLOUMI
2 chicken breasts (sliced) 3 cloves crushed garlic 1 tablespoon thyme 1 tablespoon mixed herbs Halloumi cheese, cut into squares Salt and pepper THE REST 1 cauliflower 1 tablespoon butter or olive oil 1 bunch asparagus 4 tablespoons any pesto |
LETS GO!
Dice the cauliflower and boil for 15 minutes or until extra soft. Drain every little bit of water! Add the butter + salt and pepper. Mash with a masher or a handheld food processor. Leave covered to rest. In a bowl coat the chicken in the garlic, herbs and a splash of olive oil. Pan fry the chicken until golden. Add Haloumi to the pan and fry until golden on both sides. Place the asparagus in a microwave proof container, cover the asparagus with water and cook for 4-7 minutes and drain. - Plate and enjoy! |
