WHAT YOU NEED!
1 cup of small couscous 1-2 diced tomatoes – or cherry tomatoes 1/4 diced cucumber (with skin on) 1/2 packet of feta (crumbled or diced through) 1 small red onion (diced) 1/2 tin of diced beetroot 1 handful mint finely chopped 1/2 cup of pinenuts 2 Tablespoons olive oil 1 Tablespoon balsamic vinegar Salt & pepper |
HOW!
Dice tomatoes, red onion, cucumber into a bowl. Set aside beetroot, herbs and feta cheese to add last. In a bowl put 1 cup of couscous to 2 cups of boiling water. Set aside to absorb. Once softened, cool in the fridge before you mix through the veggies, beetroot, feta, pinenuts and mint. Lastly, mix in balsamic vinegar and olive oil. Salt & pepper to season. - Plate and enjoy! |
