WHAT YOU NEED
2 large chicken breasts 2 tablespoons Greek yoghurt 1 large egg 3/4 cup of polenta 2 teaspoons garlic powder 2 teaspoons paprika 2 teaspoons mixed herbs Olive oil or cooking spray |
LETS GO!
Cut the chicken into nugget sized chunks. Pre-heat the oven to 200 degrees Celsius on fan bake. Firstly coat the chicken with one layer of polenta. Grab a bowl and create wet mix of egg + yogurt and water, you should enough water to submerge the nuggets. Coat the chicken in the wet mix then add a second and final coat of the dry mix in a shallow bowl and mix well. One at a time works best! chill the nuggets in the freezer for 15 minutes or until the coating is firm. Ensure the nuggets are separated. Lightly coat the nuggets with oil and place them on a large oven tray covered with baking paper. Or you can chose to shallow fry the nuggets in a non-stick frying pan. Cook the chicken for 10 minutes or until the chicken is just cooked. serve with sweet and sour sauce. - Plate and enjoy! |
