WHAT YOU NEED
4 cups of water (salted) 2 cups polenta Salt & pepper Olive oil |
LETS GO!
Boil 4 cups of salty water then add 2 cups of polenta – whisk continuously. The aim is to simmer the polenta until it is not grainy (you may need to keep adding a bit of water to achieve this). Once this is ready, pour the polenta into a deep dish lined with baking paper so it is approx. 2cm thick. Place it into the freezer to cool & set for 30 mins or until firm but not frozen. Cut the chilled polenta into chips and coat lightly with olive oil. There are two options for cooking polenta: 1. Fry first until it is crispy, then bake it in the oven until it is dried out and not gooey inside. 2. Or grill to crisp first, then bake until dried out. Be patient as getting it right takes ages! Sometimes up to an hour! - Plate and enjoy! |
