2 chicken breast 1/4 plain flour 5 tablespoon soy sauce 2 teaspoons mirin (Japanese cooking wine) 1 tablespoon brown 120 ml water 1 tablespoon honey |

Preheat the oven to 200°C (grill) To make the sauce, add all ingredients except the honey in a saucepan over a low heat and mix well. Simmer 5-10 minutes on high, stirring occasionally. Take off the heat, and stir in the honey. Cut the chicken breast in half so you have two thin pieces. Dust the chicken in flour. Heat a little oil in an oven-proof pan (no rubber handles) and cook the chicken on each side for 2-3 minutes until lightly golden (Note: the chicken won't be fully cooked here, it will continue to cook in the oven when grilling with the Teriyaki sauce) Pour Teriyaki sauce over the chicken breast, flip chicken breasts a few times to ensure they are well coated. Transfer the pan to the oven, and grill 3-mins each side (basting). Serve with fresh bok choy and soba noodles! - Plate and enjoy! |
