What you need!
Tacos. Soft shell tortillas ½ cup of Cheese 1 large chicken breast or 1 cup of leftover chicken 1 teaspoon chili powder 3 cloves of garlic Salt + pepper 1 teaspoon cumin Olive oil 2 cups of diced lettuce or cabbage 1 diced red onion 1 diced capsicum 1 diced cucumber 1 diced Tomato 1 Avocado Garlic dressing. 1 cup Greek Yogurt 1 garlic clove 1 handful of coriander Salt + Pepper Lemon Juice |
LETS GO!
In a plastic bag, mix together the garlic, salt + pepper, chili powder, cumin, and 1 tablespoon of olive oil. Add chicken to bag and coat with spice mix and leave to rest. In a bowl mix diced red onion, tomato, capsicum, and cucumber to make your salsa. Mix together the Garlic dressing ingredients in a small ramekin, and leave in a cool place. Make sure that all of your cool ingredients are ready to prior to cooking the chicken! These beauties are best served hot! Preheat two frying pans at medium heat, add the chicken and cook until juices run clear, remove from the heat and sprinkle your cheese on top of the warm chicken. The second pan will be used to heat through your soft shell Tacos, heat each taco for approximately 30 seconds on each side. Once your tacos are heated, pack each taco with the salsa and lettuce, top with your chicken and cheese mix and coat with Avo and dressings. -Plate, share and enjoy! |
