STIR-FRY
½ cup cashews 1 diced chicken breast 1 teaspoon salt 1 tablespoon oil 3 garlic cloves 4 tablespoons hoisin sauce 1 tablespoon soy sauce 1/4 cup water 1 teaspoon sesame oil 1 carrot 1 ½ cups mushrooms EVERYTHING ELSE 2 spiralized zucchinis 1 tablespoon of sesame seeds 1 cup rice |
LETS GO!
In a saucepan, start cooking the rice with 2 cups of water. In a heatproof bowl, pour boiling water over your spiralized zucchini noodles and cover. Place the chicken pieces in a bowl, add salt and pepper and toss to coat the chicken. Heat a frying pan on high, add the chicken and stir-fry until the outside is cooked. Add garlic and carrots to the mix. Cook for 2 minutes and change the heat to medium. Add the soy sauce, hoisin sauce, and water. When the chicken is cooked through, remove from the heat. Add the cashews and sesame oil and mix through. Drain the zucchini and toss through sesame seeds and oil - Plate and enjoy! |
